Salut, 

Lorsque tu as une hydrolyse alcaline d'un ester d'acide gras (ici cholestérol), il y a la réaction de saponification, qui va transformer l'ester en sel alcalin (ou savon si tu préfères) qui est polaire, contrairement à l'ester de cholestérol, donc on verra. bien apparaitre des composés dans la phase supérieure, à savoir les savons formés suite à l'hydrolyse.

j'espère que c'est plus clair.
