salutt, question un peu bête mais est-ce que avec l'action d'une maltase sur le glycogène on peut obtenir des dextrines et du maltose ?

Coucou @evalanine!

Je suis pas super sure de ce que je vais te dire mais étant donné que les maltases coupent les liaisons (1→4) interglucose je dirais que ça donne plutôt des isomaltoses.
