L'acyl-transférase permet de placer un AG sur une fonction OH libre. Ici : Avec la phosphatase on obtient : 1-palmitoyl-2-linoléoyl-sn-glycérol. Avec l'acyl-transférase (qui va agir sur la position 3 libre), on obtient : 1-palmitoyl-2-linoléoyl-3-palmitoyl-glycérol.
