Bonsoir, je ne comprend pas Pq en milieux alcalin les acides gras seront moins hydrophobe si qq pourrait m’expliquer svp

Salut,

C'est tout simple, ta fonction COOH à l'extrémité de ton lipide va s'ioniser, et devenir COO-, devenant ainsi polaire et rendant ton lipide amphiphile et donc moins hydrophobe ! 

Mais si tu es en milieu acide, rien de change, COOH reste comme il est
